Emily's Chicken

My sister gave us this recipe and we love it! It is named after the friend who gave her the recipe, but I've since heard it is also named Swiss Chicken. Thanks to Susan P. for letting me know this dish can be frozen!

We love to fix it with mashed potatoes because there is a lot of gravy left in the pan that goes great over the potatoes. (Thanks, Carrie, for the great idea!)

4 chicken breasts
1 can cream of chicken soup (I use homemade)
1/3 c. cooking wine (I use apple juice)
4 slices Swiss cheese
1 c. crushed stuffing mix (I never crush it and often use more than 1 c.)
1/3 c. melted butter

Place chicken in an 8x8 casserole dish that has been sprayed with cooking spray. Lay swiss cheese slices on top of chicken. Mix soup and wine and pour over chicken. Sprinkle stuffing on top of that, and drizzle melted butter over stuffing. Bake at 350 for 45-60 minutes.

My mouth is watering.

I see Katy mentioned she doesn't like Swiss cheese. We don't, either, but you can't even taste it! I've also tried mozz when it's what we've had on hand. Everything swirls together anyway so it's not a big deal.

Looks great! I'll just have to find a homemade stuffing recipe to use. Most stuffing mixes have partially hydrogenated oil in them and we work hard to keep that out of our diets.

I'm so excited to have more of a variety to put in my freezer than when DS was born last year!

Lay slices of cheese over chicken breasts - top with soup mix and then stuffing mix. Sorry I left that part out! :)

For those of you who do not care for Swiss cheese, I have used Provolone slices with this recipe for years, and it is delicious!!!

(My recipe doesn't call for cooking wine, and I've never missed it!)

Monica, do you have a cheap source for the foil pans? When I have tried to stock my freezer using those, I always felt like the savings in bulk-cooking is eaten up by the cost of the pans.

(Oh, and I am not the same Amy as the one who posted right before me!)

On the foil pans - they are $1.25 for three at Wal-Mart. A reader mentioned in yesterday's post how she lines her baking dishes with foil and then freezes the meal and lifts it out. I don't often buy the pans. I just bought them for this one stocking experiment. So, I would be inclined to try something different in the future.

Hi Monica:

This sounds/looks really good.
I have a similar recipe...it's in my church cookbook. It calls for Miracle Whip, but I'm sure you could substitute cream of chicken soup. It has celery & walnuts in it too, so is sort of like a hot chicken salad. Mary made it once when she was here & thought it was pretty good.

I also have another one that is similar, but it marinates the chicken breasts in a sour-cream mixture. After removing from that roll in bread crumbs. Top with cheese & melted butter. Actually, it's a little trouble to make, though.

I wanted to share with you what containers I use for doing my freezer meals:

They are so sturdy, freezer, microwave, and oven safe, and reusable!! I use mine again and again. Sometimes they can be hard to find, but right now my Target store and Fred Meyer have them. They come in 8x8 and 9x13. An older woman that made meals for me when I was pregnant showed me these and they are great!

I have a recipe similar to this, but it also calls for ham because it is "Chicken Cordon Bleu Casserole." With the swiss, ham, chicken, and breading (stuffing), it tastes pretty close to the real thing! :)
